There is nothing better on a cold winter day than curling up to a bowl of hot warm stew – it warms the soul. I have been working on a chickpea stew for a couple of weeks and last week…well let’s just say it was delicious.
So here it is; I am ready to share the recipe, enjoy!
1 tbsp coconut oil
1 onion, finely chopped
2 cloves garlic, finely chopped
2 carrots, chopped in bite size pieces
1 stalk celery, finely chopped
1 sweet potato, chopped in bite size pieces
1 cup frozen sweet corn
1 cup frozen peas
1 398mL can diced tomatoes
4 cups low sodium vegetable broth
2 tsp herb de Provence
2 cups chickpeas, cooked, or equivalent canned
1 cup short grain brown rice, rinsed
¼ cup parsley, chopped
Heat oil over medium heat; add onion and sauté 3 to 4 minutes. Add garlic, carrots, celery, sweet potato and sauté for 5 to 7 minutes. Add corn, peas, tomatoes, vegetable broth and herb de Provence and bring to a boil.
Add rice, reduce heat, cover and simmer for 40 to 45 minutes, until rice is tender and chewy.
Add chopped parsley and serve.
