Chickpea Stew

There is nothing better on a cold winter day than curling up to a bowl of hot warm stew – it warms the soul. I have been working on a chickpea stew for a couple of weeks and last week…well let’s just say it was delicious.

So here it is; I am ready to share the recipe, enjoy!

Chickpea Stew
1 tbsp coconut oil
1 onion, finely chopped
2 cloves garlic, finely chopped
2 carrots, chopped in bite size pieces
1 stalk celery, finely chopped
1 sweet potato, chopped in bite size pieces
1 cup frozen sweet corn
1 cup frozen peas
1 398mL can diced tomatoes
4 cups low sodium vegetable broth
2 tsp herb de Provence
2 cups chickpeas, cooked, or equivalent canned
1 cup short grain brown rice, rinsed
¼ cup parsley, chopped

Heat oil over medium heat; add onion and sauté 3 to 4 minutes. Add garlic, carrots, celery, sweet potato and sauté for 5 to 7 minutes. Add corn, peas, tomatoes, vegetable broth and herb de Provence and bring to a boil.

Add rice, reduce heat, cover and simmer for 40 to 45 minutes, until rice is tender and chewy.

Add chopped parsley and serve.

Super easy and super delish!! Hope your family enjoys it.

  1. Kim! I made this tonight. I love how easy it is, a one-pot meal. Perfect for busy Moms :) I used more sweet potato and some parsnips instead of carrots. And all I had was crushed tomatoes. So far so good! I can’t wait to try it. I think next time I might try it with quinoa instead of rice. I would just add it later right? About 15 minutes before it’s done? Thanks for another great recipe Kim.

  2. Heya Maggie, hope it was delish! Yes I think it would be great with quinoa, and yes add it later. Let me know how it turns out with quinoa. Would love to try it, but quinoa is not one of Justin’s favourites. Reece and I love it, but Justin, not so much. I tend to use it for side dishes instead of main dishes for that reason.

    besides the smoothies that I refer to in my post, I’ve made the rainbow rice and tonight for dinner the chickpea stew. My partner LOOOOOVED it… and she is very honest about my cooking.

  6. Yay, I am loving this :) The rainbow rice is a constant in our home and the chickpea stew makes an appearance every so often, favourites here for sure. So happy to hear you are all enjoying the recipes.

    Enjoy the granola bars, they are delish, and you can change them up so many ways to add variety, just have fun with them.
